I love love love curry leaves and think they give the most amazing flavor. Prior to my infatuation with curry leaves, I couldn't eat enough cardamom. How could I not cook this dish that combines those two fun flavors?
This recipe looks more complicated than it is. Well, to me it looks complicated because I'm lazy and I hate to use more than one pot/pan. But, if you are more organized than I am and do this right, it can take only 40 minutes from start to finish.
To the left are the onions browning in the pan with the spices. The photo on the right is the money shot of the finished dish, carmelized onions oozing off the sweet potatoes.As Madhur Jaffrey suggested, I ate these sweet potatoes with the Tomato Sambal and they went very well together.

this is a great food blog -- i wish i had the world vegetarian now (though i have her world of the east cookbook and absolutely love it!) and now that i'm a little more awake when i'm reading, i see you indeed are in nj, though not far. still exciting as far as i'm concerned! i've never cooked with curry leaves before (can you recall a place that has them in manhattan?) though i just bought a curry powder from dowel's (1st ave near 6th) that is lovely. and cardamom seeds, too, so less smashing the pods and more eating cardamom!

Yes, I've bought curry leaves in Manhattan - near Lex in the 20's. I don't remember exactly where, but if you walk or bike around that neighborhood, you'll either find a little market that sells curry leaves, or you can do what I did and pop your head into an Indian dress shop and ask the ladies where to find a market. Mustard seed (brown or black) are often in South Indian recipes with curry leaves, so those are worth picking up, too. And, curry leaves last a ridiculously long time.
Oh, glad I checked back in-- I forget how sometimes people respond to things in their own comments. Hmmm, I haven't been to the Indian shops in that area for awhile, for whatever reason, I'm usually more near the 1st ave. ones. Definitely worth a look see. And I've got brown/black (looks like they're mixed together) and yellow mustard seeds, and I love them, too.
Oh, but I posted again to say I made a quick visit in the library just to browse and one of the first things I saw, not even meaning to be in the cookbook section, was World Vegetarian. So now I have it, too (at least until Mar 23, unless I remember to renew it!)
